| 2 cups of Arugula | |
| 1/2 Apple chopped | |
| 1/2 Avocado | |
| 7-9 Cherry tomoatoes | |
| 1/4 English Cucumber chopped | |
| 1/8 cup of Feta cheese | |
| 2 tbls of Olive oil | |
| 1/2 Lemon | |
| Salt and Pepper to taste | |
| Optional: Quinoa topping! 1/4 Quinoa, 1/2 water and 1 tsp chicken better than bouillon |
| 1. | Chop the apple, cucumber, avocado, cherry tomatoes, basil and mint. Add to arugula. |
| 2. | Mix together and add olive oil and lemon. Add feta cheese once done, season with salt and pepper. |
| 3. | Enjoy! |
| 4. | Optional Quinoa topping. Bring water, chicken bullion and quinoa to a boil. Cook for 7 mins and then let rest for 5. Fluff and then add as a topping. |
