Apple Mint Arugula salad

Ingredients

2 cups of Arugula
1/2 Apple chopped
1/2 Avocado
7-9 Cherry tomoatoes
1/4 English Cucumber chopped
1/8 cup of Feta cheese
2 tbls of Olive oil
1/2 Lemon
Salt and Pepper to taste
Optional: Quinoa topping! 1/4 Quinoa, 1/2 water and 1 tsp chicken better than bouillon

Instructions

1.Chop the apple, cucumber, avocado, cherry tomatoes, basil and mint. Add to arugula.
2.Mix together and add olive oil and lemon. Add feta cheese once done, season with salt and pepper.
3.Enjoy!
4.Optional Quinoa topping. Bring water, chicken bullion and quinoa to a boil. Cook for 7 mins and then let rest for 5. Fluff and then add as a topping.
