Ingredients

1 lb Trimmed Green Beans
10 or so cherry tomatoes
Feta Cheese
Salt and Pepper to taste
Chopped Mint
Chopped Parsley
Optional: 1/4 bell pepper chopped
An easy minty crisp salad that goes with many summer dishes!

Instructions

1.Begin by bringing a pot of salted water to a boil. Add 1/8 cup of salt to a 2 quart pot.
2.Once water is boiling, put in green beans and blanch them for about 8 mins.
3.Drain green beans and let them cool. Add olive oil, lemon, mint and parsley. Mix together.
4.Add tomatoes and feta cheese. Season with Pepper or salt if needed. Add optional bell pepper. Enjoy!
