1 lb Trimmed Green Beans | |
10 or so cherry tomatoes | |
Feta Cheese | |
Salt and Pepper to taste | |
Chopped Mint | |
Chopped Parsley | |
Optional: 1/4 bell pepper chopped |
An easy minty crisp salad that goes with many summer dishes!
1. | Begin by bringing a pot of salted water to a boil. Add 1/8 cup of salt to a 2 quart pot. |
2. | Once water is boiling, put in green beans and blanch them for about 8 mins. |
3. | Drain green beans and let them cool. Add olive oil, lemon, mint and parsley. Mix together. |
4. | Add tomatoes and feta cheese. Season with Pepper or salt if needed. Add optional bell pepper. Enjoy! |
