| 3lbs cubed Pork (trimmed) | |
| 1 can of Mexican style Pozole | |
| 1.5 chopped onion | |
| 6 tomitillos (husks removed) | |
| 3 limes | |
| 2tbls Olive Oil | |
| 1 tsp Cummin | |
| 1 tsp Oregano | |
| 1.5 to 2 Jalapenos (finely chopped with seeds) | |
| Salt and Pepper to taste | |
| Serve with Avocado, lime and Cilantro |
Easy weeknight meal with a kick!
| 1. | Rinse and trim pork and dry with a paper towel. Season generously with salt and pepper |
| 2. | Turn on instapot to saute setting. Add olive oil and saute pork until done. Estimated 10 mins per batch. Repeat until complete. |
| 3. | Once pork is complete, remove from Instapot and set aside. Add chopped onion and garlic and saute for about 2 mins. |
| 4. | Add chopped tomatillo and pozole. Mix and then add cumin and oregano. |
| 5. | Add Pork and mix together. |
| 6. | Change settings and place on pressure cooker high for 40 mins. |
| 7. | Once complete squeeze 2 limes and mix with salt and pepoer to taste. |
| 8. | Serve with avocado, limes and cilantro. Enjoy! |
