My style, El Pollo Loco Chicken recipe

| Marinade | |
| 4 tbsp olive oil | |
| 6 limes (juice) | |
| 32 oz pineapple juice | |
| 4 tbsp apple cider vinegar | |
| 1 whole garlic chopped | |
| 1 lemon | |
| 1 orange | |
| 3-4 kumquats or sour oranges (small) | |
| 2- 3 lbs of chicken (thighs or any preference) | |
| 2-3 tbsp sumac seasoning | |
| 2 tbsp paprika | |
| Salt and pepper to taste |
| 1. | Mix all ingrediance together. Squeeze all the juices and chop the garlic. |
| 2. | Save about 1 cup of the mixture to base while grilling. |
| 3. | Place chicken in marinade and chill overnight. |
| 4. | After 24 hours, get your grill nice and hot! Make one side really hot and the other side cool. |
| 5. | Season your chicken with sumac, paprika, salt and pepper. |
| 6. | Grill on high for about 20 mins. Base with the extra sauce every 5-7 mins. During the last 20 mins of cooking place the chicken on the cooler side so it can cook thoroughly. Remove when done and enjoy! |
